RECOMMEND .... Minimum is two, I've never seen any problems having just two with both being on different Internet links at different locations. It wouldn't hurt to have them in different cities and/or countries, but sometimes you just need them to be reasonably easy to access in your location. I have mine on opposite sides of the city for instance and both are able to be easily commuted to as needed. You are more likely to have problems with an accidental error in the zone records than losing both name servers at the same time. Even if you do lose two name servers for a short period of time, normal mail servers won't give up that easily and the same arguments can be had for backups MX servers. It is far from necessary to have more than 2 name servers and it is, as Rick said, not worth having backup MX servers these days (I've never had a backup MX).
