I'm thinking of buying an angling jacket (a sort of mesh vest) from an outdoor store, just for the pockets. ( I 'm not into fish torturing, prefer to outsource that).
That is exactly what I already use for all my gadgets, I ride a motorbike
exclusively so don't have access to a glove box in my car for bit and bobs so the fishing vest covers the bases well including a large pocket in the small of my back big enough for a galaxy Tab 10.1 tablet. I also carry lots of things on my belt a nice heavy duty handmade one.

I visited Jeans West a couple of days ago but the pockets in their jeans are too small. My Samsung Galaxy S took up the entire space in one pocket (the top of the phone was just below the top of the pocket). This compares poorly to my current pair of jeans which can fit a Nexus 7 tablet in the pocket.
I think you're going to have great trouble turning that functional requirement into an SKU. Unless maybe you go to a specialist store that stocks gear explicitly for nerds, and charges a premium for it.
Reminds me of the "tactical" pants that someone (Stross?) was talking about a while back, which are just cargo pants rebranded for CoD weenies.
I have no idea where I bought my current pair of jeans, so I can't buy another the same.
I assume you already googled any likely-looking strings still legible on the care tag.
Also I don't really need pockets big enough for a tablet. A pocket the correct size for a Galaxy Note would be fairly ideal.

Not really, although putting a bigger front pocket onto a pair of jeans should be pretty easy if you have a sewing machine and an unpicker. The pocket is (almost) always thinner cloth, separate from the main denim part.
