If you want quick hosting, that can be done in a matter of minutes. Once you have a mail server with more than a few domains adding another isn't difficult.

You just have to declare that you plan to do some work as a sole trader.

A registered business name which doesn't correlate to the domain name seems unlikely to be well accepted. You aren't trying to convince the people who delegate .com.au (who don't seem to care), you are trying to convince the ISP that owns the name. As you have used jeack in a lot of online correspondence related to Linux stuff, it seems almost like a personal brand for you.
