Not sure which machine type you are looking at but the R-series server normally come with 4 x networking ports on the back of them. You can get 2x 1G ports and 2x 10G ports. I would say the thing to look for is just having an SFP+ port. This way when the time comes you can make the call to use either Fibre, Cat 6 or Twinax cabling as you just need to get the right Module for the first two or the Twinax will plug directly into the port.
Thanks for the suggestions everyone, they will be useful in future and hopfully be useful for other people on the list. We ended up running out of time and just ordering a system with the default Ethernet options as it's surely at least a GigE port and it will be initially deployed in a situation with only a single switch port. This isn't ideal, but it's one of the things that happens when working in the small business segment.
