A squid proxy can be useful for this, but obviously only for http/https traffic, and proxying isn't without its problems.
Otherwise, 'netflow' is a useful keyword to use when googling.
Of course all of this relies on either your linux server being the router (or in a position to intercept all traffic), or your router supporting the export of netflow data to your server for processing.
