I'm aware of that. But it's not required that they do so and it would be easy to use coreutils and findutils. It would just cost a little more storage space. On a recent Debian AMD64 system Coreutils is less than 15M uncompressed (I think that the phones all use JFFS2 for compression) and with man pages.
Added is the fact that Google/Apple/Microsoft/Manufacturers don't actually want people to be able to play "under the hood". They want you to do things their way, with their latest bright and shiny abomination.
